Lampredotto Sandwich

Lampredotto ( Italian: Lampredotto ) - a popular meat dish in Florence made from abomasum - the final section of the four-chamber stomach of a cow (in general, such dishes from the stomach are called trippa or trippe ). To prepare the dish, the abomasum is thoroughly washed, cut into pieces and boiled with tomatoes, onions, parsley, celery or other vegetables, as well as spices and hot pepper [1] . Served with the traditional " green sauce " as a separate dish, as well as in fast food - in the form of sandwiches or panini [2] .

Lampredotto, like a significant part of Tuscan cuisine , is of poor origin and has been found in culinary collections since the 15th century [3] . The name comes from lampreda , the Italian name for lampreys , which abundantly inhabited the Arno River. Lampredotto in appearance is similar to open lamprey sucker mouths [1] . Food, which may seem to be inedible to an unprepared tourist, is now popular among residents of Florence: up to 80 tons of lampredotto are eaten in the city per year [2] . The lampredottai or trippaio mobile trolleys from which this specialty is sold can be found in central squares, in markets, in the working districts of the capital of Tuscany [3] , and at the beginning of the 21st century the number of such food outlets is only growing - in 2010 there were no less than thirty [1] . As a rule, a glass of wine - gottini is served on lampredotto on such trays. This tradition almost fell into oblivion when in 2009 a law was passed in the European Union prohibiting the sale of alcohol in street fast food. The Florentine mayor Matteo Renzi quickly reacted to this by issuing an order authorizing the serving of wine in lampredottai [1] .
