Trippa - a traditional dish of Italian cuisine , prepared from tripe, usually a beef scar . Served as an independent dish, with a side dish or on bread , maybe a soup [1] . A tripe made with wild mint and flavored with pecorino cheese has been known since ancient Rome [2] .
To prepare the tripe, the scar is thoroughly soaked (for several hours), washed and cut into thin pieces. Fry in seasoned oil, then add wine and continue to fry until the liquid evaporates. Before serving, it is recommended to sprinkle with parmesan .
To speed up the preparation, a semi - finished product is used - previously cleaned and welded scar.
The preparation and use of the trippa was included in the works of Italian culture, in particular, it is used in the movie " Rome " by Federico Fellini , and prepared in the movie Marco Ferreri [3] .
