Hwe

Hwe or ho ( ɸø ~ we ); in the dialect of Soviet Koreans - heh - a family of Korean dishes . Hwe consist of raw meat or fish with additives. Common options:

  • sensonhwe (생선회, also hvalohwe, 활어 회; thin-cut fish or seafood, a similar Japanese dish - sashimi );
  • yukhwe (육회) - raw beef hvé with soy sauce, sesame oil and rice wine;
  • canhwe (간회) from raw beef liver with sesame oil and salt;
  • sannakchi hwe is a live octopus.

Hwe fish is usually eaten with chokochhudzhan sauce (gochujana sauce), ssamjan (쌈장), wasabi , wrapped in cabbage leaves and perilla .

Content

History

It can be assumed that hwa came from China at the beginning of the period of three states (57 BC. E. - 668 AD.), During the period of active cultural exchange. In Lunyu (1st century AD), it says: “I did not eat souring rice, and fish or meat began to deteriorate.” (食 不厭 精 , 膾 不厭 細) [1] . The word "Kui" whale. trad. 膾 , exercise 脍 , which originally meant thin strips of raw fish or meat, in the Qin dynasty began to mean raw fish. In Korea, before the Goryeo dynasty (918–1392), Buddhism flourished, and meat was rarely eaten. Hwe was almost forgotten. At the end of the Goryeo period, Buddhism gave way to position, and hwhe again gained popularity. In the Joseon dynasty, the spread of Confucianism , which promoted the eating of raw meat (which Confucius loved), made hwe fashionable [2] .

In China itself, raw meat and fish are almost never consumed, with the exception of Chaoshan cuisine, where there is a dish “yushen”, a salad of raw fish. The Taiwan-Japanese historian Ting Syunsin ( Jap. 陳 舜 臣 ) claims that raw fish and meat disappeared from Chinese cuisine after an epidemic of the 11th century. In the light of the fact that in the poems of Mei Yaochen, a famous poet of the Song dynasty, the host described the preparation of “qui” for guests, qui existed until at least 1060. [2]
