Burenkaas ( Dutch. Boerenkaas - farm cheese [1] ) - a kind of Dutch cheese gouda . It differs from the latter in its craft origin (it is made on farms from unpasteurized milk, never in large industrial enterprises), as well as in its longer ripening period - at least 18-24 months [1] , there are brands ripening for more than 4 years [2] [3] .

Aged 4-year-old Burenkaas is covered with an orange-brown crust, while the cheese itself is yellowish in color, light linen in color. The cheese is dense, crumbly, has a nutty taste with bitter notes of espresso [2] . A special aging procedure allows you to get rid of excessive harshness of taste, to make it more refined [1] .
Burenkaas in the Netherlands has been made for a very long time, but they began to consider it separate from gouda cheese only in 1997 [4] . Despite the fact that the Netherlands exports 75% of its cheese production, most of the Burenkaas production remains in the country, and is not exported [3] .
