Sestroretsky bakery

Sestroretsk Bakery - a bakery industry enterprise in the Kurortny district of St. Petersburg , one of the largest enterprises of Sestroretsk , produces bread and bakery products , including small pieces, cakes , pastries . It has its own retail network.

Background

More than 100 years since the founding of Sestroretsk, food products were brought from St. Petersburg to a factory food store or to shops of free inhabitants and merchants, who by the beginning of the 19th century totaled more than 50. Bread was baked for a long time in home Russian ovens.

A small bakery factory in Sestroretsk was built just before the Great Patriotic War ; during the months of the defense of Leningrad, the bread of a sister sister bakery saved the lives of many Red Army soldiers [1] . The first bakery was located in the building until the 1960s, on the site of which is now the Department of the Interior (Volodarsky, 7).

A large site was allocated for construction at the modern address on Sestra River Embankment (house 17, then it was Industrialization Street, house 5), where a modern enterprise was created from July 25, 1962. When the plant opened, the level of mechanization was low, all basic operations were carried out manually. Bread and rolls were baked in only three ovens, 15 tons per day, and flour was brought in bags. After the repair was completed on June 1, 1964, the bakery joined the Zelenogorsk bakery as a branch [2] . In 1970, the bakery (director A. P. Smirnova) was awarded the first place and the passing Red Banner of the baking industry of Leningrad [3] .

In 1987, the plant was reconstructed with the installation of new high-performance equipment. The territory housed the main building, a workshop for small-sized items, warehouses , workshops, boxes , a garage , scales and a checkpoint. The company at that time produced more than ten types of bakery products. Then in the assortment appeared confectionery . The organization of work is brigade, where each team is materially responsible for complaints about quality. The labor collective receives benefits from the plant to pay for food, benefits for vacation [4] .

In Soviet times, the number of employees of the plant was 73 people, worked in three shifts. There were not enough workers. For many years, the work of bakers and craftsmen at the factory was difficult. Most of the technological operations were carried out manually. Many of the workers in these years were generalists who could work on any site, in the workshop, shift, in the laboratory, where production required it. In these years, intelligentsia from the institutions of the district, for example, doctors of the Radiological Institute of the village of Pesochny and others, were sent to the plant to help the plant.

In the 1990s, the factory retained production, built a network of its own shops selling bakery products and food products. From that moment, the plant was headed by Sergey Alexandrovich Gudkov for more than 20 years.

 
 

In 2008, an action organized by the first director of the Bread of Russia Museum was held in the village of Pesochny; loaves of 1941 and 1942 samples were baked for it according to the blockade recipe at the Sestroretsky bakery. The 1941 recipe contains wallpaper rye flour, sunflower meal , bran . After the " Road of Life " began to work, oatmeal and soya flour were still added to the composition - bread became more nutritious. When there was not enough flour, one tenth of the potato was added to the bread. Loaves were divided into blockade portions of 125 grams; On September 8, school children placed beside flowers, wreaths and candles beside the grave blocks of the soldiers-defenders of Leningrad and on the mass grave of the besieged burial [5] .

Production

As of 2011, the plant has five flow-mechanized lines for the production of bakery products with a total capacity of 50 tons per day and a small-piece workshop for the production of products of more than 150 items up to three tons per day. Labor is mechanized, some units are computerized. Individual orders are fulfilled (holiday cakes, pastries according to old recipes).

The plant’s products are sold from Lakhta to Vyborg , including those delivered to many stores in St. Petersburg. In Sestroretsk there are two own stores. It has its own vehicles. In summer, three times a week, on-site trading is carried out in the village of Komarovo [6] .

Since 2011, the plant has been part of the Darnitsa company (which also owns the First Baking Association, the Okhta bakery and the Lana bakery) [7]
