History
This drink was invented by a New Zealand roaster and barista as a result of experiments on the balance of taste of coffee and milk. Barista refused a large amount of foam in the drink, reduced the proportions of milk (110 ml) and increased the number of servings (namely, switching from a single portion of espresso to a double portion of ristretto), but reducing the extraction time from 23-27 seconds to 15-19 seconds. However, the output was the same amount of coffee in the drink (30 ml). As a result of this experiment, the drink retained its milky taste and also made it possible to vividly express the taste of coffee (unlike latte , where the taste of coffee is muted and the taste of milk comes to the fore).
In the 1990s, all of New Zealand and Australia were covered by "Flat white". Later, "Flat White" conquered Britain, and after it the rest of the country.
Cooking and Parameters
The above proportions are considered correct: milk (100–110 ml) and 30 ml of coffee (double ristretto). It is recommended to use good coffee. As a rule, it is a blend (mixture) of two or three varieties of freshly roasted arabica.
First, coffee is prepared in a 140 ml faceted glass, milk froths with a minimum amount of foam and a temperature of 60-65 ° C.
