Sychug - part of the ruminant stomach (the last, fourth section of the complex four-chamber stomach of ruminants ), the so-called glandular stomach. Rennet , a digestive rennet that breaks down peptides , is produced in the abomasum of calves that feed on milk. Isolated from the abomasum of young calves and lambs , this enzyme is used in the manufacture of cheese .
Abomasum corresponds to the simple single-chamber stomach of most mammals . It connects to the book and the duodenum . The mucous membrane of the abomasum is covered with prismatic epithelium, contains the fundus (bottom), pyloric and cardiac glands and forms 13-14 long folds that increase its surface. The muscular membrane of the abomasum is formed by the outer longitudinal and inner annular layers.
Also, the word "abomasum" is called a dish prepared from a cow, pork, etc. stuffed stomach. In Florence, a popular dish is lampredotto , which is a piece of rennet cooked with vegetables, served both on their own and in a bun as a sandwich [1] .
