Horse mackerel is the commercial name for some commercial fish species from several genera of the family of horse mackerel ( Carangidae ) [1] .
These are primarily representatives of the horse mackerel genus ( Trachurus ) and individual species from the genera Carax [2] , Selar , Selaroides [3] , which are mined on an industrial scale. All over the world, these fish are eaten, serve for the preparation of various snacks, snacks and canned food.
They realize horse mackerel in fresh and ice cream form . Used for the preparation of high-quality canned food (in oil and tomato sauce). Part of the catch is smoked hot or salted and smoked cold.
Horse mackerel has tender tasty meat without small bones, which is a rich source of vitamins B1 , B2 , B6 , B9 , A , C , E , PP . It also contains omega-3 fatty acid, which is dietarily important for a healthy heart. Horse mackerel meat contains up to 20% protein, on average from 2 to 5% fat (in the summer and autumn, some individuals of horse mackerel contain up to 15% fat), as well as many trace elements : calcium , magnesium , sodium , potassium , phosphorus , chlorine , sulfur , iron , zinc , iodine , copper , manganese , chromium , fluorine , molybdenum , cobalt , nickel .
