Tag - an alcoholic beverage made by the people of Ethiopia from the roots, branches and leaves of a Geisha tree with the addition of honey from wild bees and spices (often used hops) for bitterness. Traditionally, the fermentation process is carried out using wild yeast or bacteria that enter the well with Geisha.
There are commercial varieties of tezha using different varieties of honey (flower, orange, etc.) and wine yeast, but with a traditional set of spices.
The sweet, low-alcohol version of the drink is called Berz , it has a short ripening time. Tezh has a deceptively sweet taste , masking a high alcohol content , which depends on the fermentation period.
Tagus is traditionally homemade wine , but it can also be found in Ethiopian bars.
