Berbere ( amh . በርበሬ ) is a spice mix, usually including red pepper , ginger , cloves , coriander , allspice , rue berries and ajgon . Berbere is the main component in the cuisines of Ethiopia and Eritrea . Berber is sometimes made from herbs and spices, including cultivated plants that grow wild in Ethiopia, such as Aframomum corrorima and long pepper [1] .
Cooking Method
Seasoning recipes are very different, characteristic for each region and even a family in Ethiopia [2] .
The first step in making a berber is to fry the red capsicum in a pan until the pepper is dark brown. Later, ginger , cayenne and black pepper , Greek fenugreek , aggon and coriander seeds are added to the seasoning. Then they are fried together and then the resulting mixture is ground. Next, cinnamon , cardamom , cloves and allspice are added to season the sweets. Again, everything is fried and ground [3] . It turns out a powder or a pasty mixture [2] .
In addition, cumin , turmeric , nutmeg , garlic , onion , thyme, and basil are also possible in some cooking options.
What to eat with
Berber is usually served as a seasoning for lamb . It is also served with stews , sometimes added to stews and soups , used in rice dishes [2] .
