Ajapsandali
Ajapsandali ( . Load აჯაფსანდალი; also ajapsandali [1] - Azeri. Əcəbsəndəl, arm. Աջափսանդալ, Abh. Aџapsandal) - a dish of Caucasian ( Georgian , Abkhaz , Azerbaijani , Armenian ) food [1] , is also found in the kitchens of the Central Asian Turkic peoples.
Prepared from the required ingredients: eggplant , tomatoes , sweet peppers , onions , garlic , a bunch of cilantro , basil , vegetable oil and salt, pepper to taste. Sometimes potatoes and hot peppers are added. As a rule, small eggplants are taken, all related products are taken fresh.
The closest European counterpart is a vegetable sauté (ratatouille) , in which, however, eggplants may or may not be the main ingredient, and other spices are also used.
