Danbo ( Danbo Dan . ) - semi-hard aged cheese made from cow's milk, originating from Denmark . It has a pale yellow color and a delicate elastic consistency with a small number of holes.

Typically, aging takes from 12 to 52 weeks in rectangular blocks weighing 6-9 kg, covered with a bacterial culture, which is washed off after the end of the aging cycle. Sometimes, for piquancy, caraway seeds are added to Danbo.
Danbo cheese has several analogues in Denmark, for example, Elbo , Funbo , Molbo , etc. It is sold under various trademarks, including Lillebror , Gamle-Ole , and Arla Foods Riberhus .
At the beginning of the 20th century, Danish immigrants in the southern part of Minas Gerais ( Brazil ) created a new type of cheese from Brazilian milk according to the traditional Danbo cheese recipe. This cheese is called Queijo prato .
