Otai ( Tong. Otai ) is a refreshing fruit drink from Tonga . It is a mixture of water , coconut milk and any kind of grated tropical fruits, such as coconut , watermelon , mango and pineapple , although most often these are melons that grow in abundance on Tonga. Sometimes they add some sugar, although the drink is sweet enough without it.
A very popular variety is a mixture of coconut milk, watermelon and mango. The texture of the fruit in the drink is very important: mango and watermelon should not be passed through a blender . The watermelon flesh must be carefully scraped with a spoon, and for mangoes the best way to achieve the desired texture is to use a cheese grater with large holes.
