Scordola ( rum. Scordolea , Greek. Σκορδαλιά ) - walnut sauce with garlic , widespread in Moldova and Romania .
It is prepared from crushed nuts and grated garlic, to which crushed white bread crushed in water is added. The resulting mass is ground in an enamel bowl, where vegetable oil is gradually added. After thickening, pour lemon juice or vinegar into it and mix again. Scordol can be served as a sauce , if it is very thick, but also as a sauce, diluting it with broth. Scordola is perfect for boiled meat , crayfish and vegetables . Sometimes it is eaten as a salad with fresh cucumbers .
