History
Several people claim the role of the inventor of Bloody Mary. According to a number of sources, the cocktail was invented by George Jessel in the interval between world wars. The first mention of the cocktail is found in the New York Herald Tribune on December 2, 1939:
| A new anti-hangover drink by George Jessel, which attracted the attention of correspondents and called "Bloody Mary": half tomato juice, half vodka. [3] [4] |
However, almost 25 years later, Fernand Petio, who worked at King Cole in New York since 1934, told The New Yorker magazine (July 18, 1964) that he had invented a tomato and vodka shake back in the 1920s, when he worked as a bartender at the Harry's New York Bar in Paris :
| I came up with Bloody Mary, ”he told us. - George Jessel said that he created the cocktail, but it was only vodka with juice and nothing more when I tried it. I cover the bottom of the shaker with four large pinches of salt, two pinches of pepper, two pinches of cayenne pepper , a layer of Worcester sauce , add a few drops of lemon juice and a little crushed ice, pour two ounces of vodka and two ounces of tomato juice, shake, strain and spill. We prepared from one hundred to one hundred and fifty cocktails a day at the King Cole Room and other restaurants and banquet halls. [5] [6] |
The name of the cocktail emphasizes its characteristic blood-red color. There is a legend that, having moved from Europe to America, Fernand Petio gave the tomato-vodka cocktail the name “Red Snapper”, which means “ red snapper”. However, the bar preferred to call him "Bloody Mary" (as one of the regulars suggested). According to another version of this story, everything was exactly the opposite: Fernand Petio christened his invention “Bloody Mary”, and the administration of the “King Cole” bar tried to rename it “Red Snapper” .
In Poland, the same drink called Krwawa Manka ( Polish Krwawa Mańka ) is particularly popular with local patriots, who tomato juice in the bottom of the glass and vodka in the upper remind of the colors of the Polish flag .
Composition
Prepared from vodka and tomato juice , with the addition of lemon juice , salt , ground pepper , and in some cases other additives (for example, Worcester sauce , Tabasco sauce ).
Basic Recipe
IBA Cocktail Recipe [2] :
- 45 ml of vodka .
- 90 ml of tomato juice.
- 15 ml of lemon juice.
- 2-3 drops of Worcester sauce .
- Tabasco
- A mixture of salt and celery powder
- Black pepper
The ingredients must be gently mixed and poured into a highball glass. The cocktail can be garnished with celery and a slice of lemon.
Other Options
While there is no difficulty in mixing vodka and tomato juice, more sophisticated versions of the drink have become trademarks of the bartenders who make them. A common decoration is a celery stalk when served in a tall glass, often over ice. A side dish may consist of olives, brines, carrots, mushrooms or other plants; sometimes even fish and meat products (salami, shrimp, etc.) and cheese are used.
Instead of vodka, other alcoholic bases can be used, such as gin (Red Ham cocktail), sake (Bloody geisha), tequila (Bloody Mary), whiskey ( Whiskey Mary ; Brown Mary), sherry (" Bloody Bishop ”), Mexican beer ( Michelada ), Mexican mix , etc. There is also a non-alcoholic version (“ Virgin Mary ”,“ Bloody Virgin ”).
Instead of tomato juice, some craftsmen use a cube of beef broth (“Bull volley”) or a mixture of this broth with juice (“Bloody bull”). In Latin American versions, Tabasco is often found instead of Worcester sauce.
In Russia, the variant “Bloody Mary” is popular, in which the ingredients are not mixed, but are arranged in layers - juice from below and transparent vodka from above. To do this, first pour the juice, and then slowly pour vodka along the blade of the knife, so they do not mix. First, vodka is drunk, which is immediately washed down with tomato juice. There are also options “Bloody Sam” (instead of vodka moonshine) and “Sam maniac killer” (instead of vodka moonshine, and instead of tomato juice - hot tomato sauce, ketchup or even chilli sauce).
One of the most sophisticated versions of "Bloody Mary" is considered the option of turning the glass over. To do this, you need a narrow pile and a wide glass. Vodka is poured into the stack, which must be covered with a glass so that the top edge of the stack exactly matches the bottom of the glass. Then quickly flip the glass, pressing the stack to its bottom. The surface tension of vodka will not allow it to flow out of the stack. Now you need to pour the thick tomato juice into a glass around the stack. Juice must be very thick. After that, carefully pull the stack out of the middle of the glass - you get vodka in the middle of the tomato juice.
In the movie
- Cocktail "Bloody Mary" plays a role in the plot of the film " Beautiful Captive " directed by Alain Rob-Grieux .
- In the film " Cocktail " Brian Flanagan, played by Tom Cruise , clearly demonstrates the preparation of "Bloody Mary."
