Distribution and Ecology

It is found in Eastern and Southern Europe , Turkey , Iran , Iraq , and the Caucasus [2] . On the territory of Russia it is distributed in the European part , in the Caucasus, in Western Siberia .

It grows in open garbage places, as well as on clay cliffs and limestone slopes.

Botanical Description

Rhizome with a diameter of 5-10 mm, brown, almost horizontal or obliquely ascending.

The stems are numerous, simple, less often branched , straight, 30-80 cm high, densely pubescent with multicellular hairs.

Leaves are heart-ovate, 4–13 cm long, 3–10 cm wide, sharp, leafy leaf edges edged; lower leaves on petioles of equal lamina, upper leaves short-sessile or sessile.

Inflorescences are simple or more often with one or two pairs of long branches, from 20-40-flowered false whorls ; calyx is tubular, often lilac; corolla violet, sometimes white, twice as long as calyx, two-lipped.

Nuts are roundly elliptical, light brown, sometimes dark brown, smooth, 1.5-5 mm long.

It blooms in June - September. The fruits ripen in August - September.

Meaning and Application

The aerial part of the plant contains a greenish essential oil (0.05-0.08%) with a very pungent odor.

In the 20th century, clary sage was a popular spice . Its leaves give the food a strong aroma with a specific “cool” smell. In the Caucasus, they are eaten as a seasoning for fatty meat dishes; in Western Europe and Central Asia, dry leaves are used to flavor beer , as a spicy-aromatic seasoning for cheese , ear , meat, game dishes, poultry, cold meat salads.

Good honey plant . In the period from complete pollination to fertilization, it gives abundantly easily accessible and transparent, colorless and odorless nectar ; moreover, in hot and humid weather, nectar production increases: each flower emits from 0.22 to 1.42 mg of high nectar on average (50– 86%) sugar concentration, and the total honey productivity reaches 900 kg per hectare of plantings. Honey is transparent, excellent taste. In addition to nectar, Sage whorled gives bees pollen-pollen [3] .
