Borjomi ( Borjomi , Georgian ბორჯომი bɔrd͡ʒɔmi ) - natural bicarbonate sodium mineral water with a salinity of 2.5-7.5 g / l, widely known in the countries of the former Soviet Union and Eastern Europe . Water is produced in Georgia , in the Borjomi Valley, located in the territory of the Borjomi-Kharagauli National Park.

Currently, the only producer of Borjomi mineral water is IDS Borjomi Georgia [1] , which is part of IDS Borjomi International [2] , owned by the Russian structure of Alfa Group (formerly Georgian Glass & Mineral Water Co ” [3] ).
Properties
“ Borjomi ” is a natural mineral hydrocarbonate-sodium water with natural mineralization, used for the prevention and treatment of diseases associated with the digestive system, metabolism, and is used as table water. Its systematic use (like any other highly saline water) has contraindications.
Borjomi is produced from 9 wells with a depth of 200 to 1,500 m in the territory of the Borjomi Reserve, at a temperature of 38–40 ° C, which is natural for thermal water. The mineral composition of Borjomi has not changed since 1830, since the beginning of constant laboratory observations.
Deposit
The Borjomi mineral water deposit is located at an altitude of 760–920 meters above sea level in the central part of the Adzhar-Imereti Range of the Caucasus Mountains , in the ecosystem of the Borjomi Reserve . Borjomi is considered to be water of magmatic origin, which originates at a depth of about 8-10 km, and is naturally pushed out by carbon dioxide. On its way to the mouth of the spring, water mixes with fresh, deep mineralized and low mineralized waters, saturated with minerals from the rocks of the Caucasus Mountains. Borjomi natural mineral water is produced from nine wells, the depth of which is from 140 to 1500 m. Under the influence of high temperatures and pressure, water rises from the underground depths, passes through layers of volcanic-sedimentary rocks and absorbs them into its composition. Then water passes through a layer of Cretaceous rocks and, under the influence of carbon dioxide, comes to the surface. Unlike many other sodium bicarbonate mineral waters, it does not have time to cool underground and comes to the surface warm (38-41 ° C). Recent studies of the Borjomi field suggest that it contains so-called juvenile waters , which are born with the release of oxygen and hydrogen from magma as a result of volcanic processes occurring at a depth of many kilometers. We are talking about water that has never participated in the natural cycle.
Extraction and bottling
All 9 production wells in the Borjomi Gorge operate in a self-discharge mode, that is, exactly the amount of water that is naturally restored is produced. Boring "Borjomi" is carried out on automated lines. Their power allows you to fully develop the resources of produced water. Mineral water obtained from the wells is fed to the bottling plant using a 25-kilometer pipeline. There it settles, cools and is poured into glass, PET bottles and aluminum containers.
Packaging
Mineral water "Borjomi" is presented in six packaging options:
- Glass bottle with a capacity of 0.33 liters and 0.5 liters. Shelf life of Borjomi in glass bottles is 2 years from the date of bottling.
- PET bottle with a capacity of 0.75 l, 0.5 l and 1.25 l [4] . Shelf life of Borjomi in PET packaging is 1 year from the date of bottling.
- Aluminum can with a capacity of 0.33 liters (since 2017). Shelf life - 1 year from the date of bottling.

The mechanism of action of mineral water on the body, which leads to healing from so many different diseases, is unknown to science.
From the point of view of evidence-based medicine, there is no evidence of the therapeutic effect of mineral water, since no confirmatory placebo-controlled studies have been conducted.
Quality Control System
At the Borjomi plant, they adhere to the international quality standard ISO 9001: 2008 . Mineral waters extracted from wells are daily tested in chemical and microbiological tests in special laboratories accredited according to ISO 17025: 2010 standards. In 2016, the company received the international environmental control standard ISO 14000 . The waste treatment and waste sorting program works both at the extraction stage and during bottling.
Etymology of the word Borjomi
The name Borjomi itself comes from two words: “Borzh” - “fortress wall” and “Omi” - “war”. [5] According to archaeologists, wars in this region often occurred, and the local population used the mountains as defensive fortresses.
Development History
- Borjomi waters began to be systematically used for treatment from the 1830-1840s, at the same time Borjomi grew up as a resort city. M. S. Vorontsov wrote to A. P. Ermolov : “General Golovin was definitely the first to raise the Borjomi waters; after him they were abandoned before my arrival. Having visited them on their way to Akhaltsykh in 1845, I ordered a gallery to be built there; last year and now I have been there for six weeks. Both the waters and the terrain are wonderful; a whole city is being built there, and on all sides they ask for places to build and places for farms on the opposite bank of the Kura ... "
- At the end of the 19th century, the industrial production of Borjomi mineral water began. During this period, the cousin of Nicholas II, the famous historian, Grand Duke Nikolai Mikhailovich was the owner of the Borjomi estate
The modern history of Borjomi
- In 1997, the company became the winner of a tender in which 15 applicants took part, including the world leader in the market of mineral water Nestlé . Having won, the company received a license for the production and bottling of Borjomi mineral water for 10 years;
- In the same 1997, the company managed to attract a group of major reputable investors, including the European Bank for Reconstruction and Development , the International Finance Corporation , part of the World Bank Group, and the Dutch ING-Barings Fund;
- In 2002, the company was transformed into the international company IDS Borjomi International by combining several mineral water companies: Georgian - IDS Borjomi Georgia; Ukrainian - IDS Group; Russian - IDS Borjomi Russia;
- In 2005, Borjomi Georgia’s IDS brand, Borjomi, became the market leader in the Russian Federation in terms of market share in monetary terms and entered the top three in terms of sales;
- In May 2006, the Russian Federal Consumer Protection Agency imposed ban on sales in the Russian Federation of all products manufactured in Georgia, including Borjomi. The formal reason is the non-compliance of products with the technical standards of the Russian Federation;
- Due to the Russian ban, the company lost 60% of its export sales;
- From 2006 to the present day, the company’s priority area of work has been the diversification of sales markets. Since 2006, the company has been expanding its sales geography and entering new markets such as the countries of Central Asia and the European Union;
- June 15, 2007 IDS Borjomi Georgia received a certificate of ISO 22000 international product safety standard . At that time, Borjomi was the first mineral water in the CIS and Baltic countries that meets international standards ISO 22000;
- In 2007, the company launched a new brand - Likani water of relatively low salinity. Over 4 years of existence in Georgia, this brand has occupied 30% of the mineral water market;
- In 2009, within the framework of the auction announced by the Government of Georgia, IDS Borjomi Georgia became the winner and received a license for the production and bottling of Borjomi mineral water. The license is valid for 25 years.
Ban in Russia and use of a brand by a Russian company
May 4, 2006 after the order of the chief sanitary doctor of Russia Gennady Onishchenko and the Federal Agency for the Protection of Consumer Rights [6], the import of Borjomi into Russia is prohibited , which the Georgian side considers to be a politically motivated decision [7] .
Against the background of the disappearance from the Georgian water market, sales of the Nagutskaya-26 mineral water bottled in the Stavropol under the name Russian Borjomi began, but in 2007 the court banned the sale of water under such a similar name at the suit of the Georgian producer of the original Borjomi [8] .
