Sicilian cuisine is the national cuisine of Sicily , which has absorbed the traces of all the cultures that inhabited the island over the past two thousand years. Although it is considered only a variety of Italian cuisine , it still contains a noticeable influence of Spanish , Greek and Arab culinary traditions.

Arab domination in Sicily brought to its kitchen the use of apricots , citrus fruits , melons , rice , saffron , raisins , nutmeg , cloves , sweet pepper , pine nuts and cinnamon . [1] The influence of the Normans and Hohenstaufen recalls the great love of the population for meat dishes, such as bruschialoni [2] . The Spaniards brought to the island numerous exotic from the New World , including cocoa , corn , turkey , tomatoes and other vegetables. [1] In Catania , on the east coast of the island, where the Greek colonists originally lived, beans , olives , fresh vegetables and fish are used quite abundantly in cooking. Among vegetables, eggplants , peppers and tomatoes are especially popular, and tuna , sea bream, sea ββbass , swordfish and squid are the most favorite seafood from the population. The influence of North Africa affected the western province of Trapani , where couscous is often prepared.
Traditional Dishes
Sicily is home to many varieties of cheeses, the most famous of which are pecorino siciliano and cachiocavallo .
The most famous Sicilian dishes are arancini (rice balls with a filling), Pasta alla Norma (prepared mainly in Catania ), caponata , pani ka meuza and couscous al pesche. As in all of Italy, pizza is prepared in Sicily, which is called Sicilian .
Among sweets, frutta-martorana , pinolata, buccillato , cannoli , granite , pignoli , pinolata and cassata are especially popular.
