Fenugreek Blue

Blue fenugreek ( Latin Trigonella caerulea ) is an annual plant , a species of the genus Fenugreek ( Trigonella ) of the legume family ( Fabaceae ).

The birthplace of the species is the Mediterranean . Naturalized and cultivated almost throughout Europe , including the European part of Russia [1] .

It grows in the fields among shrubs.

All parts of the plants have a strong aroma. The leaves, dried and crushed into powder, are used to add flavor and coloring to green cheese . Fruits and inflorescences, dried and crushed into powder, are used as seasoning ( utsho-suneli [2] ) and for making basturma .

Botanical Description

Annual plant 30–80 cm high.

The stalk is straight with densely upward directed branches .

The leaves are ovate, 2-5 cm long, 1-2 cm wide, oblong at the upper leaves, sharp-toothed at the edges. Stipules are triangular-lanceolate, dentate. The legs of the inflorescences are longer than the leaves.

The inflorescence is dense, capitate, spherical, after flowering it does not stretch and does not become loose. The calyx is twice shorter than the corolla , its teeth are lanceolate, equal to the tube, the corolla 5-6 mm long, blue, notched.

 
Fruits and seeds

The fruit is a bean , obovate-rhombic, three times longer than the calyx, sharply narrowed into an almost straight nose, 2 mm long, with faint veins.

It blooms in May - June. Fruiting in June - July.
