In many jurisdictions, turtle soup is illegal, since many species of turtles are endangered and therefore their fishing is prohibited.
Recipe
This is a thick soup of a brownish color [1] [2] . Sliced turtle meat is boiled for 3-4 hours in salted water. In Russia, the resulting broth is used in combination with beef, veal, chicken or turtle meat is also added. To give the soup the necessary density, use potato starch .
In Asian countries such as Singapore , turtle soup is considered a delicacy of Chinese cuisine and has a rich herbal flavor.
Fake Tortoise Soup
In English-speaking countries imitation of tortoise soup ( English Mock turtle soup ), prepared from veal offal (brains, hooves, entrails), is popular.
Historical Facts
US President William Howard Taft was a big lover of tortoise soup and even had a cook - a specialist in the preparation of this dish [2] .
