Matsutake (from Japanese : “pine mushroom”) grows in Asia ( China , Korea , Japan ), Northern Europe ( Finland [1] , Sweden ), Russia and North America . It is especially appreciated in Japanese , Chinese and Korean cuisines for its specific pine aroma and exquisite taste.
RangeIt grows at the foot of trees, hiding under fallen leaves. Lives in symbiosis with the roots of certain trees. In Japan, it is often densely flowered pine ( Pinus densiflora ), in North America - fir and pine . Prefer dry arid soil. Forms an annular colony. The soil under the mycelium becomes white. With an increase in the number of fallen leaves and branches (improved nutrition), the medium becomes unsuitable for the growth of the fungus.
In 1999, the Swedish scientists Bergius and Danell, using DNA analysis, discovered that the Swedish Tricholoma nauseosum and the Japanese Tricholoma matsutake are one species. This discovery led to an increase in the export of these mushrooms from Scandinavia to Japan (due to a similar aroma and taste).
Mushroom DescriptionThe hat is brown. The pulp is white with a characteristic spicy smell resembling cinnamon. In a ripe mushroom, the hat is cracked along the edge and the white color shines through. The leg is dark brown, long. It is difficult to get out of the ground, unlike its similar counterparts.
