According to the recipe, pseudo- Apicia, Lukan sausage was prepared as follows: pepper with satura, ruta, celery, laurel berries was ground, garum was poured, as well as finely chopped meat, pepper in grains, a lot of fat. With this stuffing the guts started and hung up to smoke. [one]
The recipe for this sausage, in which spices and various products were mixed, is characteristic of the cuisine of the times of the beginning of the empire [2] .
This sausage variety has been known since antiquity; it may have been brought by legionnaires from Southern Italy (sausage is named after the Lucania region, today Basilicata) to Rome [3] . In the Apitsia cookbook, this sausage is mentioned, for example, as a side dish to other dishes.
