Crab sticks (also called "imitation of crab meat") - a type of product that is created artificially from processed fish protein surimi or chopped white fish meat. The shape and color resembles the meat of a crab claw or leg.

History
The Japanese company Sugiyo Co., Ltd. (ス ギ ヨ, Sugiyo) invented crab sticks under the name Kanikama in 1973 . In Japan, crab sticks are known under the name Kanikama. In 1976, the Berelson Company introduced the product on the international market for the first time. In the USSR, for the first time, the production of crab sticks was established in the city of Murmansk in 1984 at the Protein plant. [one]
Composition and production technology
Contrary to the name, crab sticks do not contain crab meat at all [2] . The main ingredient is surimi - ground fillet of white ocean fish (pollock, hake, blue whiting) from the North Pacific . Crab sticks entering the Russian market are produced, as a rule, in the CIS countries or China . Most of the Chinese products purchased by Russia do not contain surimi, but consist of vegetable ( soy ) protein, starch and egg white , as well as flavorings [3] .
Individual sticks, as a rule, are red or yellowish-red, rectangular-oblong in shape; the layers of crab sticks can be carefully separated and unwound in much the same way as thread cheese . It is not recommended to freeze crab sticks to avoid moisture loss. Crab sticks have a characteristic smell of seafood , the texture resembles rubber , and the taste is slightly salty . To enhance aroma and taste , as a rule, sodium glutamate is used [2] .
Usage
Mostly crab sticks are used in salads as an inexpensive substitute for real crab meat or as an inexpensive source of fish protein. They are often part of the popular California rolls . They can become a hot snack, for example, cooked in batter [4] . And also used as an independent ready-made snack, in the form of snacks .
