Salomas is a solid fat obtained in industry by the , mainly vegetable oils. The production of salomas was widespread in the USSR to meet the needs of the food industry in a large amount of solid fats - substitutes for animal fat. [one]
The essence of the hydrogenation process is the partial hydrogenation of the double bonds that make up the unsaturated fatty acids of the oil. Nickel catalysts are used in industry. An important feature of the hydrogenation process is the formation of trans fats , mainly elaidic acid . Currently, in the food industry, salomas are being replaced with transerefected fat . This is due to the introduction of restrictions on the content of trans isomers of fatty acids in food products.
In industry receive technical and food salomas. The most widespread are food salomas of brands PM2, PM5, PM12. Food salomas are used in the production of margarines , specialty fats, as well as in the production of soaps .
In pre-revolutionary Russia, there was a joint-stock company "Salomas" , combining several companies specializing in the production of solid fats, as well as other food and chemical components.
