Burrata cheese was first made in 1920 in Italy , on the Bianchini farm ( Italian: Bianchini ) near the city of Andria . Burrata cheeses are currently produced in the regions of Puglia , Campania and Basilicata . Due to its delicate taste, burrata in a relatively short time has gained great popularity, and is now considered a delicacy .
A burrata ball resembles mozzarella on the outside, but inside has a soft creamy consistency. Burrata contains at least 60% fat in the dry residue, calorie content is in the range of 330 kilocalories per 100 grams.
In the manufacture of burrata, hot cheese mass is collected in a bag, which is previously laid out from the inside with mozzarella plates.
