Taraco
Taracospaghetti
Tarako ( 鱈 子 ) is a variety of salted caviar in Japanese cuisine , usually made from pollock roe [1] , although the "tara" ( 鱈 я ) in Japanese is cod .
Used as:
- separate dishes: for breakfast or as part of a Japanese New Year's meal [2] ;
- filling for onigiri ;
- seasoning for pasta (usually with nori ).
Traditionally, taraco was painted in bright red, but this practice began to decline due to concern about the dangers of food colors . On Kyushu, tarako is usually served with red chili flakes - possibly due to historical ties to Korean culture.
