Kiev cake is a culinary product, the recipe and technology of which were developed in 1956 at the Karl Marx Kiev Confectionery Factory .

History
According to legend, once the confectioners forgot to put in a refrigerator a batch of egg white, intended for biscuit . The next morning, the head of the biscuit shop, Konstantin Nikitovich Petrenko, with the help of 17-year-old assistant confectioner Nadezhda Chernogor, to conceal the mistake of colleagues, at his own risk put the frozen protein cakes with butter cream, sprinkled with vanilla powder, decorated the surface with floral patterns. So there was a predecessor of the cake, which was destined for many decades to become the hallmark of Kiev .
The Kiev Cake recipe underwent changes over time: in the 1970s, confectioners improved the process of preparing the protein-nut mixture, then hazelnuts were added to the cakes, experimenting with peanuts and cashews . However, this type of nuts increased the cost of the cake, so the factory returned to hazelnuts.
Recipe
Today the cake consists of two air- nut meringue cakes with layers of cream . The surface of the cake is decorated with various creams, the side surface is sprinkled with hazelnut crumbs.
Other facts
- The “Kiev Cake” was one of the gifts from the Ukrainian SSR to L. I. Brezhnev on his 70th birthday. The three-tiered work of culinary art consisted of 70 cakes and weighed more than five kilograms. They say that the secretary general was so pleased that he demanded that his cooks repeat the masterpiece. A detailed original recipe at the Kiev factory is still kept secret.
