History

The origin of the name of the drink is due to the fact that in the 17th century Europe the name of the Capuchin order served, in particular, to indicate the characteristic color (red-brown) that the cassocks of the monks of this order had; in the XVIII century, they also began to call a coffee drink made from egg yolks and cream, which was prepared in Austria ( German: Kapuziner ). The Italian form of the name of the drink ( cappuccino ) has been recorded only since the 20th century.

A classic Italian drink is prepared according to the following recipe: dopil (double portion)) of espresso is poured into a ceramic cup from a coffee machine, after which milk is heated and foamed in steam. Sometimes when pouring milk into an espresso barista with special movements create a picture on the surface of the drink - this technique is called latte art . The quality of espresso, the temperature of the milk, its consistency and proportions are very important to get a good cappuccino. The basis of the drink is laid in the proportional ratio of milk and espresso - five to one [2] . Traditionally, cappuccino is served in a preheated ceramic cup with a volume of not more than 210 ml [2] . In Italy, cappuccino is served in a special cup - tazza - shaped like a bowl with a handle [4] . Tazza is always made of thick-walled ceramics. As in the case of espresso, the cappuccino cup must be preheated, so in coffee houses these cups are located on coffee machines, heated by heat from boilers [4] . In Italy, cappuccinos are usually drunk at breakfast with a bun [2] .
