Vindalu is a popular Indian dish brought to Goa by Portuguese sailors.
The name Vindalo comes from the Portuguese vinho de alho ( garlic wine ). The history of the dish is closely connected with the Indian province of Goa, where Portuguese sailors traveled. Thus, pork traditionally marinated in vinegar (wine vinegar is common in Portugal), stewed with garlic , got to India, where many traditional Indian spices (such as cumin , cinnamon , mustard seeds , cayenne pepper , red pepper and fruits) were added to it. tamarind ), but retained some features of Portuguese cuisine (wine or apple vinegar, fried onion , garlic).
The traditional recipe assumes the presence of the following obligatory components: pork, vinegar and garlic, as well as a mixture of hot seasonings ( garam masala and / or curry ), however, there are many variations, ranging from replacing pork with other types of meat (or even several) and ending with light mild vegetarian varieties of vindaloo.
The dish has become widely known in Britain , where it is usually considered the most spicy among all curries, which contradicts the original traditions of Goa cuisine not too sharp compared to the rest of the cuisines of India .

- There is a certain contradiction in the name of the dish, since “alu” in Hindi means “ potato ”, while potatoes are not included in the classic vindalu recipe.
- The British group Fat Les has written a parody of English football anthems, playing with the caricatured English football fans who have been drinking beer and curry immensely and building their whole lives around football. The name of the song is Vindaloo [1] (English version) [2] . Despite being a parody, the song has become an unofficial anthem of the 1998 FIFA World Cup .
