Oyster mushroom

Oyster mushroom [1] , or oyster mushroom [2] ( lat. Pleurotus ) is a genus of mushrooms in the oyster mushroom family , or pleurotus ( Pleurotaceae ).

It develops on a substrate of non-living plant residues, from which it is able to absorb cellulose and lignin . In nature, grows on the trunks of dried trees .

There are technologies for the industrial cultivation of oyster mushrooms on sawdust , cereal straw , husk of sunflower seeds, and technologies for amateur cultivation of mushrooms on cotton wool are known [3] .

Oyster mushroom mycelium (mycelium) can be stored. There are companies selling it for garden farms.

Economic Use

An important feature of mushrooms of this genus is ease of cultivation and high productivity. They are easy to grow at home.

Oyster mushroom is the second most popular cultivated mushroom in Russia. In 2015, it accounted for approximately 27% of the total production of cultivated mushrooms in the country (about 3.8 thousand tons) [4] . However, now new projects are being implemented in the country, due to which production will grow. So, only the implementation of the Biogrina project should ensure the production of 30 tons of oyster mushrooms per day by August 2019. Accordingly, in 2020, the output of this project alone will be more than 10 thousand tons [5] .
